I love breakfast & I love chocolate chip cookies – so this is a match made in heaven for me!
Something you should know about me – I LOVE CHOCOLATE (basically as much as Oprah loves bread). So any reason to eat chocolate for beakfast is a good one in my book.
These oatmeal chocolate chip “cookies” are tasty on the go breakfast, or a nice mid-morning treat.
Chocolate Chip Banana Breakfast Cookies
Ingredients
- 3 Ripe Bananas, mashed
- 1/4 Cup Peanut Butter Powder
- 1 1/2 TBS Maple Syrup
- 1 tsp Vanilla Extract
- 1/2 tsp cinnamon
- 1 1/2 Cups Old Fashioned Oats
- 1/4 Cup Chocolate Chips
Instructions
- Preheat the oven to 350 Degrees.
- In a bowl- combine the mashed bananas, peanut butter powder, maple syrup, vanilla & cinnamon
- until fully combined.
- Next, add the oats and stir to incorporate into the banana mixture.
- Then add the chocolate chips & mix until just combined.
- Using a cookie scoop, divide the mixture into 12 cookies on a parchment paper lined baking sheet. Gently press the cookies down to flatten (they won't flatten out on their own!).
- Bake for 15-20 minutes.
- Let the cookies cool for about 5 minutes on the baking sheet before transferring them to a cooling rack.
- Once completely cool, store in an airtight container (I like to keep mine in the fridge)
